Light and Fast Apple Walnut Salad

This is a quick and easy salad that takes not time at all and is very healthy. I throw this together fairly quickly and people love the fresh taste. I usually let guests dress their own salad because this usually makes it more personalized for peoples liking. Some prefer more dressed or less and this gives them the option to make the salad better for the individuals liking. Dressing separately also helps for left over salad as the dressing doesn't make it soggy over time and it will taste fresher for longer.

Ingredients:
1 apple
2 packages of spinach
1/3 cup toasted walnuts
1/3 cup dried cranberries
1/2 cup of crumbled feta cheese
1 tbsp white wine vinegar
1/2 tbsp balsamic vinegar
1 tbsp raspberry vinaigrette
1/2 tbsp nut oil

Cooktime: 5 mins

Serving Size: Entire salad (should serve 6-8 as a side salad or 4-5 as a full meal salad)

Recipe:
1. Heat the oven to 90F

2. Cover sheet pan with aluminum foil and spread walnuts across

3. Coat them with a little Olive Oil and salt and put in the oven for about 5 mins

3. While the walnuts are cooking cut Apple into small wedges and cube feta

4. In a bowl add your raspberry vinaigrette, white wine vinegar, balsamic vinegar, and nut oil together
and stir well

5.In a separate Salad bowl, add spinach, feta, dried cranberries, toasted walnuts (once done toasting) and apple.

6. Toss salad with out dressing and serve with vinaigrette on the side.
