Soy Sauce and Honey Glazed Salmon over Hawaiian rice

This dish is too easy and good to be true. The honey and soy sauce adds a sweet and salty delicate glaze to the salmon while the pineapple ties it in with the rice and freshness this dish up. This is one of my late night creations from scrolling through recipes and putting together a crazy concoction. Surprize your guests with a flavorful different dish or just enjoy a healthy easy dinner for yourself. Either way i cannot stress how incredible this dish is! Enjoy!



Ingredients:

For the salmon
2 4oz Salmon Filets with the skin
1/2 cup of corn starch
1 tsp salt
A shake or two of cumin
A shake of Paprika
2 Tbsp butter
2 cloves of garlic minced
1/2 onion cubed
Salt/Pepper
1 lemon

For the Salmon Glaze
1/4 cup of honey
1 tbsp of pineapple juice
1/4 cup Soy Sauce
1 tbsp sesame oil
1 tsp corn starch
1 tbsp brown sugar
2 cloves of minced garlic
(1 tbsp sherry if you want)
1 tsp of cumin
1/2 cup water

Serving size: 1 Salmon Filet

For the Hawaiian Rice:
1 cup Long grain rice
2 cups water
1 cup coconut milk
2 cups of small dices pineapple
1/4 White Onion diced
3 cloves of garlic minced
2 tsp ginger grated
1/4 cup pecans crushed
Serving size: 1 cup

Directions:

For the Hawaiian Rice
1. Heat 2 cups water, 1 cup coconut milk and 2tbsps of salt in a pan
2. Add your rice in and cook for about 20-25 mins (until done, i reccomment trying a grain to see if its to your liking)
3. In a pan add butter or oil of choice and sautee you onion, garlic, ginger, green onions, pecans and pineapple.
4. Add rice to the pan
5. Add cumin, and salt to your liking
6. Put in a bowl and set aside

For the Salmon:
1. In a shallow dish put lemon juice and put the salmon meat side down, and salt and pepper the skin.
2. Heat butter in a pan, the add in minced garlic and chopped onion
3. Take the salmon out of the liquid and pat it down with a cloth or paper towel then mix baking powder in a bowl with salt, paprika, and cumin and lightly dust the meat part of the Salmon
4. Once the Garlic and onion are fragrant, add the salmon SKIN SIDE DOWN and let that cook for about 6-7 mins on medium/high
5. Once the skin is crispy turn the salmon over and let the heat touch each side for 2-3 seconds and put aside.
6. In a bowl mix the salmon glaze ingredients together, the heat a pan add a little olive oil and the mixture in.
7. Once bubbling add back skin side down and baste the salmon for a few mins the let the meat sides have heat for 30 second each
8. Add salon on top of the Hawaiian Rice and drizzle the rest of the sauce on.
