Four Cheese and Spinach Ravioli

Ingredients

For the pasta dough:

2 cups all-purpose flour (plus a little more for dusting)

1 teaspoon salt

3 large eggs, plus 1 for egg wash

2 tablespoons extra-virgin olive oil

Cornmeal, for dusting

Filling:

3 cups Spinach

8 tbsp Ricotta Cheese

8 tbsp Feta Cheese

8 tbsp Bri Cheese

Parmesan Cheese

Garlic powder


Serving Size: 6 servings (24 ravioli)

Directions

1. Combine the flour and salt on a flat surface

2. Shape into a mound and make a bowl in the middle of your mound.

3. Add the eggs and 1 tablespoon of the olive oil to the bowl and lightly beat with a fork.

4. Gradually draw in the flour from the inside wall of the bowl in a circular motion.

5. Continue to incorporate all the flour until it forms a ball.

6. If the dough starts to crumble add more oil alternatively if the dough gets wet add flour.

7. When the dough is soft and barely sticky wrap in plastic wrap and let dough rest.

8. In a pan, heat up oil, then add spinach squeeze half a lemon over the spinach and cook until dark ad completely wilted

9. In a bowl combine spinach, ricotta, feta, and Bri mix until combined thoroughly.

10. Take out dough and send it through the pasta rolling machine from highest, rolling through twice before moving to the next lower setting until you get to 3.

11. Lay out dough on floured surface cut 2 equal rectangles out of the dough

12. Beat 1 egg, lay out the long sheets of pasta, and brush the top surface with the egg wash, which acts as a glue.

13. Take 1 Tbsp of your cheese filling on 1/2 of the pasta sheet, about 2 inches apart.

14. Fold the other 1/2 of the pasta sheet over the top.

15. Press sides around the filling down and try to get the air pockets out.

16. You can now cut into squares or circles, then pinch around the edges again.

17. Boil water, once boiling put the ravioli in and take them out when they start to float to the top of the water (Note: check the edges to make sure they don't need more cooking)

18. Assemble 4 raviolis on a plate, a little olive oil, parmesan cheese, (half a diced tomato if you want), and basil
