Cilantro and Lime rice with chicken breasts is a quick and easy dinner that the family will enjoy, The acid in the rice balances out the heartiness in the chicken. This combination of salts , fats and acids brings together a nice well balances delicious dish. I like to sear the chicken before baking it so that the sear locks in the juices and adds a fried texture as well. BONUS: I added balsamic and miso carrots to add a sweetness to this completed dish that you can add by watching the video or look up the recipe here:
Ingredients:
For the Chicken:
2 chicken breast (3oz
4 tablespoons of mayonnaise
1 teaspoon of olive oil
1 clove of garlic
Salt, pepper
1/2 cup of bread crumbs
1 teaspoon of dried herbs, such as oregano or thyme
For the Rice:
2 cups of instant rice
2 tsps butter
2tbsps balsamic
2 limes
2 tbsps dried cilantro leaves
Cook Time: 30mins
Serving Size: 2 (3oz chicken + 1 cup of rice )

Recipe:
1. Set oven to 350F
2. In a bowl combine bread crumbs, salt, pepper, and dried herbs
3. Coat Chicken breasts in mayo
4. Cover Chicken breasts in bread crumb seasoning combo
5. add olive oil to pan and turn to medium hot, add garlic and roast until fragrant
6. Add chicken once pan is searing
7. Cook chicken on each side for 2 mins
8. On a baking sheet put chicken in the oven and cook for 25 mins or until chicken internal temp is 165F
9. Put instant rice in the microwave according to directions. If using dried rice boil water and cook rice with salt.
10. Add rice to pan with butter, balsamic and cilantro.
11. Cook until rice has become a little fried/has a slight crunch
12. Put rice on a plate, mix in lime from 2 limes and put chicken on top.
