Sometimes you just need something flavorful and light. I make this for lunch or dinner when I'm not wanting anything too heavy and I am on the go. The secret here is all in how you cook the pork and how you make your Tzatziki sauce. Then the rest is up to the fresh ingredients. This technique i use to cook pork is my sped up way of slow cooking when I don't have all day. However if you have slow cooked pork on you then use that for SURE!
