Sometimes you just need something flavorful and light. I make this for lunch or dinner when I'm not wanting anything too heavy and I am on the go. The secret here is all in how you cook the pork and how you make your Tzatziki sauce. Then the rest is up to the fresh ingredients. This technique i use to cook pork is my sped up way of slow cooking when I don't have all day. However if you have slow cooked pork on you then use that for SURE! Ingredients:
For the Pork:
4oz Pork Breast
1tbsp butter
2 tbsps Worcestershire Sauce
2 minces cloves of garlic
1 shallot sliced
Rosemary
Salt and pepper

For the Tzatziki Sauce:
1 cup Plain greek yogurt
1/2 of a lemons juice
1/2 cup grated cucumber
1/4 cup of
1 clove of grated garlic
1 tbsp of olive oil
1 tbsp chopped dill
1 tbsp of chopped lemon grass
1/2 tsp curry powder

For the wrap:
2 burrito wraps of choice
1 long cucumber diced
1 carton of grape tomatoes diced
1 3x6 rectangle of feta
1 shallot sliced

Directions:
1. Heat your oven to 300F
2. Take a fork and stab your pork throughly over the top
3. Melt your butter in a bowl and add your Worcestershire Sauce, garlic, lemon juice and Rosemary
4. Take aluminum foil and put your pork on top, coat with the butter mixture, and add shallots to the top
5. Wrap the Pork in the aluminum foil
6. Put on a baking sheet pan and cook in the oven for 15mins
7. Slice your cucumber over a napkin and make sure to drain the water out. (You don't want the Tzatziki sauce to be watery and split
8. Put your cup of greek yogurt into a bowl
9. Add all of the Tzatziki sauce ingredients, EXCEPT the yogurt, into a food processor and pulse three times, then add the content in the food processor to the bowl of yogurt and mix together with a spoon.
10. Slice cucumber, grape tomatoes, feta, onion and pork into cubes
11. Lay your burrito wrap flat, coat in tzatziki, all your veggies, pork, and feta (remember this makes TWO burritos so only half of each ingredient per burrito.
12. Old in the sides until the edges are touching, grab the bottom keeping the side edges touching and fold bottom edge around burrito contents, wrap edge under tightly and fold around to close. and slice diagonally down the middle
